Spicy Garlic Seedai

DESCRIPTION

Seedai is a small fun size savory balls made out of rice flour & other spicy ingredients. Seedai is the favourite south indian deep fried snacks. This seedai receipe is altered with spicy garlic flavour and fusion of uppu seedai & poondu murruku.

Prep Time: 30 mins
Cook Time: 15 mins
Yields: 2 Cups
 

INGREDIENTS

  • Rice flour – 1 Cup
  • Roasted gram flour – 2 Table spoon
  • Omam/Ajwain – 1/2 Tea spoon
  • Asafoetida – A pinch
  • Butter – 2 Table spoon
  • Water – As required
  • Oil – For deep frying

To Grind

  • Garlic pods – 5 to 8
  • Dry red chillies – 3
  • Water – 2 Tablespoon

INSTRUCTIONS

  • Soak garlic pods and dry red chillies in 2 Tablespoon warm water for about 30 minutes

  • Grind them in blender to a fine paste adding little water if required, keep aside

  • In a large bowl, add rice flour, roasted gram flour, omam/ajwain, asafoetida, softened butter and salt, give it a rough mix until well combined

  • Now add ground garlic chilly paste to the flour mix and knead it with required water until everything combined well to a dough

  • The dough shoud not be too hard or too soft

  • Now pinch a small amount of dough and roll into a small balls. Spread the dough balls in newspaper and let it dry for about 30 minutes

  • Meanwhile heat oil in a frying pan for deep frying

  • Once the oil is heated, add one dough ball into oil, it will raise immediately if the oil is hot enough for frying

  • Add handful of dough balls into oil and fry for few minutes by mixing it often for even frying

  • Once the bubble ceases and the seedai turns golden brown, remove it from oil and let it drain in paper towel

  • Let it cool & store it in airtight container

  • Spicy & crispy seedais are ready

NOTES

  • Add/remove number of chillies depending on your spice level

  • Make the dough to medium hard consistency, to avoid burst or disperse while frying. (If the dough is too hard, seedai dough will burst while frying. If the dough is too soft, seedai dough will disperse while frying)
