Roasted Puffed lotus seed (Phool makhana)

DESCRIPTION

Lotus seed also called as fox nuts or makhanas. These are generally available as puffed lotus seed that is rich potassium and calcium, being healthy snacking option. This puffed lotus seed can be used in various kind of cooking and here I make simple roasted puffed lotus seed with exotic spices. This snack can be enjoyed by anyone without any guilt with tea or coffee, makes a great crunchy evening snack or at anytime.

INGREDIENTS

  • Puffed lotus seeds - 2 Cups
  • Ghee - 2 Teaspoon
  • Chilli powder - 1/2 Teaspoon
  • Chaat masala - 1/2 Teaspoon
  • Salt - 1/2 Teaspoon
  • Pepper - 1/4 Teaspoon
  • Asafoetida/Hing - A pinch
  • Turmeric powder - 1/8 Teaspoon

INSTRUCTIONS

Heat a pan on medium flame and add 1 teaspoon of ghee and roast the puffed lotus seed for 5-6 minutes, until it is crunchy and slight brown tint on sides. Transfer the roasted lotus seeds to another vessel.

In the same medium hot pan, add remaining ghee of 1 teaspoon and add all the spices. Roast the spices for few minutes and do not roast for too long as it would burn.

Now add the roasted lotus seeds to the spice mix in pan and mix it until the spices are coated well with roasted puffed lotus seeds. Switch off the flame, let it cool and serve. Once cooled can store this roasted lotus seed in an air tight container to retain crunchiness for upto 2 weeks.Enjoy!

NOTES

  • The first step of roasting puffed lotus seed is important to gain crunchiness. Do not skip this step.
  • Puffed lotus seed is avilable in Indian/Asian markets.
